Mathilde Chapoutier Sainte Victoire, Rosé Côtes de Provence

The Mathilde Chapoutier “Saint-Victoire” is rich, long and velvety on the palate com bined with a freshness which gives the wine an ethereal touch. M. Chapoutier’s esteemed parcels are located to the east of Aix-en-Provence, at the foot of Aurélian and Sainte-Victoire mountains (Côtesde Provence, Saint-Victoire), facing directly south enabling the grapes to ripen perfectly. In this blend, the higher percentage of Rolle brings structure and m ore tannins to the wine, resulting in a beautiful acidity and mouthfeel, thus making it more food forward.

APPEARANCE: Crystalline with pale pink highlights

NOSE: Intense, complex aromas, nicely accentuate by floral notes.

PALATE: Rich, long and velvety on the palate combined with a freshness which gives the wine an ethereal touch.

APPELLATION A.O.C Côtes de Provence

VARIETAL Grenache 35%, Syrah 30%, Rolle 20%

and Cinsault 15%

TERROIR Soil here is poor and shallow and made up of limestone and clay sandstone.

VINIFICATION Harvesting is carried out at night, by machine. Short, cold maceration on the skins. Low temperature fermentation. Constant protection against oxygen to preserve aromatic potential.

ALCOHOL 13.5%

AGING 5 months in stainless steel vats

GASTRONOMY Pairs nicely with casual meals (king  shrimp) and fine dining (strawberry tartare with basil and a dash of lime juice).
