TERROIR: The soil is clay-limestone
VINIFICATION: Short, cold maceration on the skin, followed by direct pressing in an oxygen free environment. Cool temperature alcoholic fermentation. Aged 5 months in stainless and bottled at the end of winter.
AGEING: 5 months in stainless steel vats
GASTRONOMY: Pairs nicely with casual meals (Mediterranean buffet, barbeque) and fine dining (beef carpaccio with parmesan, shavings).
