“Fruit is to wine what disco to music: It is important but it should not be dominant,” says Michel Chapoutier. It’s a joke, delivered with a wry smile. But it’s also a challenge. “It shouldn’t be more important than the texture or the length,” he continues. “The marriage of wine and food is the persistence of the wine without dominating the food. It has to be complementary, and wine with only fruit doesn’t do that.”
